MURRAY BRIDGE 3 YEAR CLOTH CHEDDAR

Description

This cloth cheddar has a long history. Generations of Murray Bridge cheesemakers have used the same traditional recipe for this great local cheddar. During its maturation, it receives a great deal of care and attention in this specialised environment of high humidity and constant temperature. It is not often that a local cheese of this calibre is available. This cheese takes full advantage of the moulds available in our maturation room to develop into a beautifully balanced, full flavoured cheddar with a long finish. The flavour has forward notes of Umami, so quite savoury, highlighted by classic cheddar tanginess. It has a dense, close texture that flakes perfectly, with flecks of tiny Tyrosine crystals for a little crunch. To be savoured while stocks last!
