Handcrafted on the beautiful Mornington Peninsula in Victoria, we use Australian grown and owned sugarcane juice and molasses, which we then ferment and distil in our stunning Italian still, Matilda, then the ageing process occurs in new and ex-bourbon American Oak barrels. (Website)
