This wine is classic Coonawarra, showing bright crimson colour with rich berry and cassis aromas and flavours over soft tannins. It is named after the leather tanning pits which were dug into the terra rossa soil last century on the original Hollick property in Coonawarra. French and American oak maturation contributes to the wine's overall balance and drinkability. Cabernet Sauvignon is the major component of the blend, with 10% to 20% Merlot added for softness in the early years of the wine's life, and more often than not a dash of Cabernet Franc and Petit Verdot are included to add complexity.
