Nice dry flavour which intensifies with heating. Made with native southern rice ("Hattanso") which almost became extinct. The brewer, Miho Imada, is one of the few female 'toji' (brewers) in Japan. Made using soft water which is more prevalent in the south of Japan. For many hyears it was very difficult to make sake using this water but after years of perseverance from the regional sake 'guild' they were able to. The result is a more soft and gentle sake that is enjoyable to drink.
