Foxeys' reputation for sparkling winemaking is built on this wine, a blend of chardonnay and pinot noir each about 40%; pinot meunier 20%. As a non-vintage blend, the base wine prior to second fermentation was aged in barrels from 10 to 22 months, with some older material aged in magnum for several years. Made by the traditional method, it is bottle fermented, aged in our nearby coolstore, then returned to the winery to be hand disgorged.
A dry, aperitif style with a fine bead, it is a pretty and delicate sparkling wine. Some floral notes, some red apple, a little yeasty development starting.
