Brillat-Savarin is the crème de la crème of surface ripened, white mould cheeses. A triple cream cheese from Normandy, it was originally made in the late 1920s as the perfect single cheese to be served at a cheese course. It was named in honour of France’s most eminent gourmet, Jean Anthelme BrillatSavarin, whose most famous words are, “Tell me what you eat, and I will tell you what you are.” This modern version is a true crowd pleaser. It has a luscious, creamy texture that literally fills the palate, giving way to a lovely, salty finish. It is perfect on a cheese board where it could sit on its own and command the table, be the first of big flavoured cheeses or the last of milder cheeses. It matches perfectly with sparkling wines such as prosecco, cava or champagne. A real taste of France that will make many people happy.
